Meet Lance Monteiro. He is one of the top Chefs in Calgary currently working at Cilantro. We recently had the chance to sit down with him to talk about the journey that brought him where he is now.

(f): Tell us about yourself. Are you from Calgary? Tell us about the journey that brought you here.
“I was born in Calgary, enrolled in cooking school in 2005 (SAIT) and graduated with honours in 2007. Worked and travelled throughout Western Europe (London, south France, Barcelona and Honolulu, Hawaii) came back to Calgary in 2010. Was hired as Sous Chef at Cilantro in the fall of 2010 and was made Head Chef in 2015. ”
(f): Do you remember the moment when you decided to be a Chef? What are some other jobs you’ve done in the past? Did you always see cooking as your career path?
“The moment I realized I wanted to be a chef was when I was volunteering in an orphanage in Baja, Mexico. I was in flight school at Mount Royal University at the time and was volunteering at an orphanage for the summer. Somehow I became the cook there, and really enjoyed it, when I came back that summer I dropped out of flight school and enrolled at SAIT for professional cooking.”
(f): What is the most memorable moment that you have never forgotten in the kitchen?
“One time, I was working a 120 people wedding with only 2 cooks and an apprentice, the apprentice passed out on the line and my Chef literally stepped over him to finish plating the wedding. Once all the plates were gone, we helped him up and made sure he was okay.”
(f): Name one Chef alive or passed away that you would want to cook side by side?
(f): What is the first restaurant you worked at? What are some of the other restaurants you were involved in so far?
“The first real restaurant I worked in was the Brava Bistro, I have worked at Mureattas, opened a place in Fernie, BC named Livery, and opened Bar -C for CRMR. Also worked at Allen Wongs in Honolulu”

“Not at this time”
(f): What cuisine is most unusual to you? Why?
“South American cuisine, I would like to learn more”
(f): If you were a topping what would you be?
“Tomato, it’s the most versatile. Spans across all cuisines.”

“Salt! Anything salty.”
