minna tran inspires us with this vietnamese restaurant
Almost two years ago, the concept PanicSupper, a Vietnamese food box, started to bring home all the ingredients to cook a good Vietnamese meal. Founder Minna tells of a spikrak journey upwards with plans for expansion in Stockholm and eventually throughout the world. And everything started with a regular baking day with craving for mama’s Vietnamese food.
“Me and my sister were really backy one day last year. We both lay in bed all day and were sucked on Vietnamese food. We are grown up with this food, so we both must have it sometimes. At the same time, we are supercrackers, we do not want food from any place. It must be the correct coriander, the proper Thai basil and the meat must be marinated for three hours and so on. So we concluded that we had to cook this food ourselves. But when you make Vietnamese it takes a lot of preparation – and it takes a lot of time. ”
Left the job
“The idea of PanicSupper came from that day; why is there no easy way to get on and cook Vietnamese food? I quit my job two weeks after we came across the idea of PanicSupper. I was convinced that it was the right time and right product because cooking is so incredibly popular today. People love to cook. At the same time, cooking from other kitchens, that is, foreign cuisine is something that often makes the Swedes so bad at ease. There are different spices, ingredients and going to the store is often quite so hard. I can also relate to that because I’m both Swedish and Vietnamese. ”
Made food at night
“I’ve always had an indescribable suction for Vietnamese food, but before, I did not even know how to fix it. Nor was I ever satisfied when I was eating Vietnamese food and could feel just how cheated on the hooks. At the age of ages, I also felt a desire for mother’s food. I started creating my own recipes with much inspiration from grandmothers, aunt and mom. It happened that I stood at night and experimented, mixed and weighed tastes with each other with the goal of creating something unique. No dishes here are copied or taken from any cookbook. ”
Triggered by skeptics
“I have always been so passionate about my idea and believe in it so much that I think I manage to convey it to those I work with. I met by very many who supported me and believed in me. Of course, I’ve met very many skeptical people who did not believe it at all. It’s probably the same that those who have made me the most to create this, I wanted to show them that it could actually go. I think it’s important to never take too much of negative criticism. ”
A box of everything
“In our box you have everything, really everything. I think it’s so trashy when you get home a food box where you still have to have some things at home. If it’s salty then it should be in the box, and I’ve been careful that we will offer. You order home food for a dinner, and choose the size of the box depending on how many people you become. There is no subscription or so, but you may want to make PanicSupper an hour before, for example. We are so incredibly stressed today, so it’s especially gratifying to save time on cooking. Of course, you can also come and eat at the restaurant, bring our ready-made meals or book us for catering if you have any event. ”
“Big Visions in Small Body”
“In New York this industry is huge. If it’s a bottle of wine, New York Borna is very focused on getting the on-demand food and their whole behavior has changed to the fact that they prefer to go home their food than go to the store. There we are definitely not yet, in Sweden or the Nordic countries, but I absolutely believe we’re moving that way because we all want to save time.
Now the next interim goal for us to grow in Stockholm, I have planned to open several new restaurants here. But I have big visions in a small body and my plan has been crisp from day one. For me it was not to start a regular restaurant and then be ready, for me it was to build a concept that can be taken globally. I see it as a bit of my call, making sure that Swedes (and the rest of the world eventually) are going to discover Vietnamese food. ”
